This are the jars I've prepared for a home made mandarin marmalade. It makes a great gift for family and friends.
Ingredients: Mandarins, sugar (half weight of mandarins), a lemon and water.
This is a recipe where we take most of the piece of fruit, all except the white part and pips (the seeds we can use them in a gauze bag while boiling to release their pectin and thus helps to gel)
First of all you'll have to wash very well all the citrus used, in this case the lemon and the mandarins.
Blend or process mandarin pulp in batches until chopped
Combine rind, pulp, sugar and water in boiler. The more amount of citrus skin add, the result will be a more intense flavor but bitter.
Stir constantly over heat, without boiling, until sugar is dissolved. Bring to the boil, reduce heat, simmer uncovered, without stirring, for about 50 minutes or until mixture will jell when tested on a cold saucer
To sterilise jars: put them in boiling water for a few minutes, take them out and let them dry on a dishcloth, stand the marmalade10 minutes before pouring in the jars.
Seal when cold. to make a vacuum in the cans put them upside down.
