Rice with milk to enjoy

The smell of cooking rice with milk brings me back when I was a kid and its the same aroma my grandma and my mum use to cook. This is a basic recipe for cooking over low heat with only 3 main ingredients rice, milk and sugar and many varieties of cooking.
At home we like it with creamy but clear texture. I don't use butter and I also try not to use much sugar, but essential don't forget the lemon peel and the cinnamon.
Ingredients for 8 servings:
  • 1 liter of milk 
  • 0.5 liters of water 
  • 200 g rice 
  • the skin of half a lemon and / or half an orange 
  • a cinnamon stick 
  • 200 grams of sugar (a bit more or less according to taste) 
  ground cinnamon to serve

Preparation:
  1.  We put a saucepan with water, while washing the rice under running water with a strainer to remove excess starch. 
  2. Bring to the boil and throw the rice previously washed and drained. 
  3. In another saucepan heat milk with the citrus peels and cinnamon stick.
  4. Cook the rice in water until most is absorbed, about 10 minutes 
  5. Then start adding the hot flavored milk and mix as the rice will swell and absorb the liquid, stir with a wooden spoon, cook gently and completely uncovered for 15 minutes. 
  6. Finally add the sugar and mix vigorously,
  7. remove from heat and remove the lemon peel and cinnamon sticks.
  8. Pour into individual dishes and allow to stand 
  9. The dessert is ready to serve when it is at room temperature or cold from the refrigerator to serve the next day.
A very traditional dessert, that you can flavour at your taste.
